Pumpkin Spice Doodles

These Pumpkin Spice Doodles are my fall-inspired twist on a classic snickerdoodle, and they were created for a very important reason… someone wanted a pumpkin cookie! 😂🎃

My mom’s friend is one of my best customers and regularly sends her husband to pick up cookies from my farm stand. He’s a deer hunter, so he’s usually there bright and early. One weekend, he showed up and was BIG MAD that I didn’t have anything pumpkin. So obviously, I had to fix that.

The result was these soft, chewy Pumpkin Spice Doodles. They have all the cozy pumpkin spice flavor I love about fall baking, plus a sweet pumpkin spice sugar coating. I even turned them into sandwich cookies with a creamy pumpkin spice filling.

There’s one little twist to this recipe. Traditional snickerdoodles use cream of tartar, but my son doesn’t like the tang it adds. Instead, I use lemon juice. If you love that classic snickerdoodle flavor, you can absolutely use 1 teaspoon of cream of tartar instead.

These homemade pumpkin cookies are soft, buttery, chewy and full of warm pumpkin spice flavor. They’re perfect for fall bake sales, farmers markets, Halloween parties, or anytime you need a pumpkin dessert that isn’t pumpkin pie. 🎃🍪

And if you’re anything like me, you might find yourself turning them into pumpkin spice sandwich cookies because one cookie just wasn’t enough. 😂

Pumpkin Spice Doodle Tips

Chilling the dough overnight makes these cookies much easier to scoop and helps them bake up beautifully. Before baking, roll each dough ball in a mixture of sugar and pumpkin spice for that classic snickerdoodle-style coating.

For the sandwich cookie version, let the cookies cool completely before adding the pumpkin spice filling. The filling is simple, creamy and perfectly spiced, and it takes these cookies from delicious to completely irresistible.

Pumpkin Spice Doodles

Servings: 12 finished cookies

Ingredients
  

  • 1 cup browned butter weighed back out to a full cup!
  • 1½ cup granulated sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 3 cup all purpose flour
For Rolling
  • ¼ cup granulated sugar
  • 2 tbsp pumpkin spice
Frosting
  • 2.5 cup powdered sugar
  • 3/4 cup softened butter
  • 1 tbsp milk
  • 1 tsp vanilla
  • 1-2 tsp pumpkin spice

Method
 

  1. start by browning your butter, I typically do this the night before so that it has time to cool!
  2. if you are in a rush you can put the browned butter in the freezer to chill down faster!
  3. once the browned butter is cooled and weighed back to 226g (1 cup), cream together your butter and sugar for 3-5 minutes until it is no longer grainy
  4. add in your eggs and vanilla extract and mix until combined
  5. next add in your dry ingredients, once the flour is added be careful not to overmix the dough! just mix until there is no longer flour visible
  6. overmixing dough once the flour is added leads to a denser cookie! this is because mixing causes gluten development
  7. portion out your cookies, I used a 3 tablespoon cookie scoop.
  8. roll your cookies in the pumpkin spice sugar mix
  9. I like to put my cookies in the fridge overnight. You don't HAVE to do this but I like to!
  10. Bake your cookies at 325℉ for about 19 minutes until the edges just start to turn golden (not too long! it is a pale cookie if you wait until the tops start to turn it will burn)
  11. allow your cookies to fully cool before filling them with the chocolate frosting! Making the frosting is super simple just throw it all in the stand mixer and mix until everything comes together!
  12. I used a piping bag with a 1M tip. cover the flat side of one cookie, then press the flat side of another cookie into it, congrats you now have a sandwich cookie!
